Traditional Madeira Tuna Recipe

Ingredients

  • 24 oz. Tuna steaks
  • 1 cup Heavy cream
  • 1 cup Orange juice
  • 1/2 cup All-purpose flour
  • 1/3 cup Maderia wine
  • 1/2 tbl. Horseradish
  • 1/8 tsp. White pepper
  • 1/8 tsp. Onion salt
  • 1/8 tsp. Celery salt

Method

  1. Rinse the tuna steaks until cold running water, and then dry them using paper kitchen towels.
  2. Pour the orange juice into a large bowl and add the tuna steaks.
  3. Then cover the bowl and refridgerate overnight.
  4. Using a mixing bowl combine the onion salt, celery salt, white pepper, salt and flour.
  5. Take the marinated tuna steaks out of the fridge and roll through the flour mixture, coating all sides well.
  6. Heat a large skillet over a medium heat and add a little olive oil.
  7. Drop in the tuna steaks and sear on all sides until light brown.
  8. Once seared, lift out of the skillet and keep warm.
  9. Pour in the Madeira wine, heavy cream and horseradish into the skillet and stir.
  10. Let it reduce a little and thicken.
  11. Then pour over the tuna steaks and serve with a garnish of lemon wedges and orange.
