Mediterranean Tuna Casserole Recipe
Ingredients
- 12 oz. White tuna (chunks)
- 9 oz. Frozen artichoke hearts (chopped)
- 7 oz. Cream of chicken soup
- 4 oz. Fettuccine (broken)
- 2/3 cup Milk
- 1/2 cup Mozzarella cheese (grated)
- 1/4 cup Onions (chopped)
- 3 tbl. Parmesan cheese (grated)
- 3 tbl. Olives (sliced)
- 3 tbl. Sun-dried tomatoes
- 1 tbl. Butter
Method
- Cook the fettuccine according to the instructions on the packet.
- Take a large skillet and melt the butter.
- Then sauté the onions until they are tender.
- Lift off the heat and add the soup, artichoke hearts, tuna chunks, mozzarella cheese, tomatoes, olives, milk and thyme.
- Then add the cooked fettuccine while stirring.
- Pour the mixture into a greased casserole dish.
- Sprinkle the top liberally with grated parmesan cheese and cover.
- Bake in an oven preheated to 375°F for about 20 minutes.
- Lift out of the oven and remove the cover.
- Then bake for a further 10 minutes.
- Serve piping hot!
