Tortilla Manicotti Recipe
Ingredients
- 8 Flour tortillas
- 2 cups Chicken (cooked / diced)
- 1 cup Ricotta cheese
- 1 cup Mozzarella cheese (shredded)
- 1 cup Salsa
- 1/2 cup Cheddar cheese (shredded)
- 1 can Chillis (chopped)
- 2 tbl. Cilantro (chopped)
- 4 Scallions (chopped)
- 1 Tomato (chopped)
Method
- Combine the chillis, chicken, tomato, cilantro, ricotta cheese, scallions and seasoning in a bowl.
- Spread out the tortilla on a flat surface and spoon out some of the tortilla filling down the center.
- Roll up the tortillas and place in a greased baking tray, seam side facing down.
- Spoon the rest of the salsa mix over the top of the tortillas.
- Then sprinkle generously with the mozzarella and cheddar cheeses.
- Bake in an oven preheated to 325° F for about 20 minutes.
