Tortilla Manicotti Recipe

Ingredients

  • 8 Flour tortillas
  • 2 cups Chicken (cooked / diced)
  • 1 cup Ricotta cheese
  • 1 cup Mozzarella cheese (shredded)
  • 1 cup Salsa
  • 1/2 cup Cheddar cheese (shredded)
  • 1 can Chillis (chopped)
  • 2 tbl. Cilantro (chopped)
  • 4 Scallions (chopped)
  • 1 Tomato (chopped)

Method

  1. Combine the chillis, chicken, tomato, cilantro, ricotta cheese, scallions and seasoning in a bowl.
  2. Spread out the tortilla on a flat surface and spoon out some of the tortilla filling down the center.
  3. Roll up the tortillas and place in a greased baking tray, seam side facing down.
  4. Spoon the rest of the salsa mix over the top of the tortillas.
  5. Then sprinkle generously with the mozzarella and cheddar cheeses.
  6. Bake in an oven preheated to 325° F for about 20 minutes.
