Thai Style Shrimp with Fried Noodles Recipe

Ingredients

  • 10 Shrimp (unpeeled)
  • 1 lb. Dried rice vermicelli
  • 2 cups Divided bean sprouts
  • 3 tbl. Vegetable oil
  • 1 tbl. Cilantro
  • 1 tbl. Dried shrimp
  • 1 tbl. Green onions (chopped)
  • 1 tbl. Fish sauce
  • 1 tbl. Ketchup
  • 1 tbl. White sugar
  • 1 tsp. Chilli powder
  • 1 tsp. Garlic cloves (crushed)
  • 2 Eggs (beaten)
  • 2 Lemon wedges

Method

  1. Put the noodles in a large bowl filled with hot water and soak for about 15 minutes.
  2. Heat a large skillet over a medium / high heat with a little oil.
  3. Sauté the garlic until golden brown.
  4. Drop in the shrimp and cook for about 3 minutes.
  5. While stirring, add the ketchup, white sugar and fish sauce.
  6. Then pour in the beaten eggs while stirring.
  7. Add the noodles and stir fry them so they are well coated.
  8. Now add the bean sprouts and fry until they turn tender.
  9. Spoon onto a serving plate and garnish with a sprinkling of peanuts, chilli powder, chopped green onion and dried shrimp.
