Thai Squid Salad Recipe
Ingredients
- 1 lb. Squid
- 1 cup Mint leaves
- 3 tbl. Lemon zest
- 2 tbl. Fish sauce
- 2 tbl. Lime juice
- 2 tbl. Canola oil
- 2 tsp. Sugar
- 2 tsp. Thai chilli paste
- 4 Lettuce leaves
- 1 Garlic clove (crushed)
- 1 jalapeno chilli (sliced)
- 1 Tomato (chopped)
- 1 Onion (sliced)
Method
- Place the lettuce leaves on a serving platter.
- Arrange the sliced tomato wedges on top of the lettuce leaves.
- Take a mixing bowl and combine the lime juice, fish sauce, chilli paste and sugar.
- Heat a wok over a steady heat and heat the chillis, garlic and lemon grass.
- Drop in the squid and onions, stir fry them for about a minute.
- Add the mint leaves while stirring.
- Spoon the squid mixture over the tomatoes and lettuce leaves.
- Then sprinkle with the dressing before serving.
