Thai Squid Salad Recipe

Ingredients

  • 1 lb. Squid
  • 1 cup Mint leaves
  • 3 tbl. Lemon zest
  • 2 tbl. Fish sauce
  • 2 tbl. Lime juice
  • 2 tbl. Canola oil
  • 2 tsp. Sugar
  • 2 tsp. Thai chilli paste
  • 4 Lettuce leaves
  • 1 Garlic clove (crushed)
  • 1 jalapeno chilli (sliced)
  • 1 Tomato (chopped)
  • 1 Onion (sliced)

Method

  1. Place the lettuce leaves on a serving platter.
  2. Arrange the sliced tomato wedges on top of the lettuce leaves.
  3. Take a mixing bowl and combine the lime juice, fish sauce, chilli paste and sugar.
  4. Heat a wok over a steady heat and heat the chillis, garlic and lemon grass.
  5. Drop in the squid and onions, stir fry them for about a minute.
  6. Add the mint leaves while stirring.
  7. Spoon the squid mixture over the tomatoes and lettuce leaves.
  8. Then sprinkle with the dressing before serving.
