Spicy Shrimp with Catfish Gumbo Recipe
Ingredients
- 2 lb. Catfish fillets (diced)
- 28 oz. Tomatoes (diced)
- 16 oz. Okra (sliced)
- 6 cups Water (hot)
- 2 cups Shrimp (peeled / deveined)
- 1/4 cup Cooking oil
- 2 tsp. Salt
- 1 tsp. Crab boil
- 1/2 tsp. Thyme (dried)
- 1/4 tsp. Cayenne pepper
- 4 Beef bouillon cubes
- 2 garlic cloves (crushed)
- 2 Celery stalks (chopped)
- 2 Bay leaves
- 1 Bell pepper
Method
- Heat a skillet over a steady medium / high heat, adding the oil.
- Now add the bell pepper, garlic, celery and a chopped onion. Cok for about 10 minutes.
- In a jog, dissolve the beef bouillon cubes in hot water and pour into the skillet.
- Now add the tomatoes, shrimp, okra, salt, pepper, thyme, bay leaves, cayenne pepper and crab boil while stirring.
- Bring to the boil, then reduce the heat and simmer for a further 10 minutes.
- Add the diced catfish fillets to the skillet and simmer for another 15 minutes.
- Remove the bay leaves before serving.
