Spicy Shrimp with Catfish Gumbo Recipe

Ingredients

  • 2 lb. Catfish fillets (diced)
  • 28 oz. Tomatoes (diced)
  • 16 oz. Okra (sliced)
  • 6 cups Water (hot)
  • 2 cups Shrimp (peeled / deveined)
  • 1/4 cup Cooking oil
  • 2 tsp. Salt
  • 1 tsp. Crab boil
  • 1/2 tsp. Thyme (dried)
  • 1/4 tsp. Cayenne pepper
  • 4 Beef bouillon cubes
  • 2 garlic cloves (crushed)
  • 2 Celery stalks (chopped)
  • 2 Bay leaves
  • 1 Bell pepper

Method

  1. Heat a skillet over a steady medium / high heat, adding the oil.
  2. Now add the bell pepper, garlic, celery and a chopped onion. Cok for about 10 minutes.
  3. In a jog, dissolve the beef bouillon cubes in hot water and pour into the skillet.
  4. Now add the tomatoes, shrimp, okra, salt, pepper, thyme, bay leaves, cayenne pepper and crab boil while stirring.
  5. Bring to the boil, then reduce the heat and simmer for a further 10 minutes.
  6. Add the diced catfish fillets to the skillet and simmer for another 15 minutes.
  7. Remove the bay leaves before serving.
