Spiced Stuffed Squid Recipe

Ingredients

  • 3 Squid (cleaned)
  • 1 cup Water
  • 1/2 cup white wine
  • 1/2 cup Uncooked white rice
  • 1/4 cup Pine nuts
  • 1/4 cup Raisins
  • 2 tbl. Olive oil
  • 3 tsp. Anchovy paste
  • 2 tsp. Red pepper flakes (crushed)
  • 2 tsp. Oregano (dried)
  • 7 Garlic cloves (crushed)
  • 1 Onion (chopped)
  • 14 1/2 oz. Tomatoes (stewed)

Method

  1. Pour the water and rice into a large saucepan.
  2. Place over a medium heat and cook for about 20 minutes.
  3. Cut the tentacles and head from the squid. Then chop the tentacles up.
  4. remove the quill and then peel off the skin.
  5. Rinse off the prepared squid under cold water and set aside.
  6. Now combine the rice, with the pine nuts and raisins.
  7. Heat a large skillet with a little oil and sauté 4 of the garlic cloves until soft.
  8. Then stir in the red pepper flakes and dried oregano.
  9. pour in the tomatoes, their juice, wine and the anchovy paste.
  10. Season the mixture to taste and cook over a medium heat.
  11. Now stuff the squid with the mixture and secure with a wooden toothpick.
  12. Place the stuffed squid on a greased baking tray.
  13. Bake in an oven preheated to 350° for an hour.
  14. Garnish with lemon wedges and serve hot.
