Spiced Stuffed Squid Recipe
Ingredients
- 3 Squid (cleaned)
- 1 cup Water
- 1/2 cup white wine
- 1/2 cup Uncooked white rice
- 1/4 cup Pine nuts
- 1/4 cup Raisins
- 2 tbl. Olive oil
- 3 tsp. Anchovy paste
- 2 tsp. Red pepper flakes (crushed)
- 2 tsp. Oregano (dried)
- 7 Garlic cloves (crushed)
- 1 Onion (chopped)
- 14 1/2 oz. Tomatoes (stewed)
Method
- Pour the water and rice into a large saucepan.
- Place over a medium heat and cook for about 20 minutes.
- Cut the tentacles and head from the squid. Then chop the tentacles up.
- remove the quill and then peel off the skin.
- Rinse off the prepared squid under cold water and set aside.
- Now combine the rice, with the pine nuts and raisins.
- Heat a large skillet with a little oil and sauté 4 of the garlic cloves until soft.
- Then stir in the red pepper flakes and dried oregano.
- pour in the tomatoes, their juice, wine and the anchovy paste.
- Season the mixture to taste and cook over a medium heat.
- Now stuff the squid with the mixture and secure with a wooden toothpick.
- Place the stuffed squid on a greased baking tray.
- Bake in an oven preheated to 350° for an hour.
- Garnish with lemon wedges and serve hot.
