Fried Cajun Calamari with Lemon Aioli Recipe

Ingredients

  • 12 Squid (cleaned / sliced)
  • 3 cups Canola oil
  • 2 cups Olive oil
  • 5 tbl. Flour
  • 5 tbl. Cajun seasoning
  • 1 1/2 tbl. Dijon mustard
  • 1 tbl. Garlic (crushed)
  • 1/2 tbl. White pepper
  • 1/2 tsp. Salt
  • 2 Egg yolks
  • 1/2 Bread slice (chopped / crusts removed)

Method

  1. Mix the flour and cajun seasoning a bowl.
  2. Add the calamari and coat well with the mixture.
  3. Shake off any excess flour.
  4. Heat a skillet with a little oil over a skillet.
  5. Drop in the calamari and grill until they turn a light golden brown.
  6. Drain off any excess oil with paper towels.
  7. Mix the mustard, garlic, salt, pepper, bread, lemon zest and juice in a food processor until smooth.
  8. While the machine continues to mix, add the oil and some water until a lighter consistency.
  9. Place the grilled cajun calamari on a serving plate and drizzle with the lemon aioli.
