Fried Cajun Calamari with Lemon Aioli Recipe
Ingredients
- 12 Squid (cleaned / sliced)
- 3 cups Canola oil
- 2 cups Olive oil
- 5 tbl. Flour
- 5 tbl. Cajun seasoning
- 1 1/2 tbl. Dijon mustard
- 1 tbl. Garlic (crushed)
- 1/2 tbl. White pepper
- 1/2 tsp. Salt
- 2 Egg yolks
- 1/2 Bread slice (chopped / crusts removed)
Method
- Mix the flour and cajun seasoning a bowl.
- Add the calamari and coat well with the mixture.
- Shake off any excess flour.
- Heat a skillet with a little oil over a skillet.
- Drop in the calamari and grill until they turn a light golden brown.
- Drain off any excess oil with paper towels.
- Mix the mustard, garlic, salt, pepper, bread, lemon zest and juice in a food processor until smooth.
- While the machine continues to mix, add the oil and some water until a lighter consistency.
- Place the grilled cajun calamari on a serving plate and drizzle with the lemon aioli.
