Deluxe Squid Calamari Deluxe Recipe
Ingredients
- 2 lb. Squid
- 1 lb. Tomatoes (chopped)
- 1 cup Olive oil
- 1 cup Sauterne
- 2 tsp. Parsley (chopped)
- 1/2 tsp. Oregano
- 1 Garlic clove (crushed)
- Croutons
- Salt
- Pepper
Method
- Heat the olive oil in a large saucepan over a steady heat.
- Drop in the garlic and cook for about 2 minutes.
- Once cooked, strain out the garlic.
- Drop in the squid into the oil and fry for about 3 minutes until transparent.
- Season with salt and pepper while stirring and add the oregano
- Reduce heat and cook for a further 2 minutes.
- Now add the chopped tomatoes, sauterne and parsley.
- Cover the pan and simmer for another 5 minutes.
- Serve on plates and garnish with croutons.
