Marinated Sardines Recipe

Ingredients

  • 1 lb. Fresh sardines
  • 4 fl. oz. White wine vinegar
  • 3 tbl. Olive oil
  • 2 tbl. Spanish onion (chopped)
  • 2 tsp. Lemon juice
  • 1 Garlic clove (crushed)
  • 1 Red pepper (diced)
  • Parsley (chopped)
  • Ground black pepper

Method

  1. Place one sardine skin-side uppermost on work surface and press thumbs firmly along backbone.
  2. Turn sardine over, pull out backbone from head and cut free at tail.
  3. Repeat with remaining sardines.
  4. Lay sardines in a shallow, non-metallic dish. Sprinkle over sea salt, vinegar, garlic and onion.
  5. Cover and leave in a cool place overnight.
  6. Drain and rinse sardines; reserve some of onion.
  7. Dry sardines on absorbent kitchen paper, then place on a serving plate.
  8. In a small bowl, mix together oil, lemon juice, reserved onion and salt and pepper.
  9. Pour over sardines and garnish with diced red pepper and parsley.
