Soy Poached Salmon Recipe

Ingredients

  • 1 1/2 lb. Salmpn fillets
  • 30 oz. Soy sauce
  • 3/4 cup Dark brown sugar
  • 2 tbl. Ginger (sliced)
  • 1 Star arise

Method

  1. Sauté the soy sauce, brown sugar and star arise.
  2. Bring to the boil, then reduce the heat to simmer.
  3. Add the salmon fillets (skin side down) and cover the pan.
  4. After about 8 minutes, remove the fillets and keep warm.
  5. Reduce the liquid by half and spoon over the salmon.
