Mexican Style Baked Salmon Recipe

Ingredients

  • 2 lb. Salmon fillets
  • 1/2 cup Fresh cilantro (chopped)
  • 1/4 cup Lemon Juice
  • 2 tbl. Olive oil
  • 1 tsp. Ground cumin
  • 3/4 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 2 Tomatoes (sliced)
  • 1 Jalapeno (seeded / chopped)
  • 4 Garlic cloves (crushed)

Method

  1. Preheat your oven to 450°F.
  2. Take a small mixing bowl and combine the cilantro, jalapenos, lemon juice, cumin and garlic.
  3. Brush the top of the salmon fillets with olive oil before seasoning.
  4. Place salmon on an aluminium sheet.
  5. Spread the cilantro mixture over the salmon.
  6. Fold the aluminium into a tent, with the edges meeting at the top.
  7. Place in the oven and bake for 20 minutes.
