Mexican Style Baked Salmon Recipe
Ingredients
- 2 lb. Salmon fillets
- 1/2 cup Fresh cilantro (chopped)
- 1/4 cup Lemon Juice
- 2 tbl. Olive oil
- 1 tsp. Ground cumin
- 3/4 tsp. Salt
- 1/2 tsp. Black Pepper
- 2 Tomatoes (sliced)
- 1 Jalapeno (seeded / chopped)
- 4 Garlic cloves (crushed)
Method
- Preheat your oven to 450°F.
- Take a small mixing bowl and combine the cilantro, jalapenos, lemon juice, cumin and garlic.
- Brush the top of the salmon fillets with olive oil before seasoning.
- Place salmon on an aluminium sheet.
- Spread the cilantro mixture over the salmon.
- Fold the aluminium into a tent, with the edges meeting at the top.
- Place in the oven and bake for 20 minutes.
