Grilled Salmon with Barbecue Sauce Recipe
Ingredients
- 6 oz. Salmon fillets
- 1 1/2 cup Tomato ketchup
- 1/2 cup Dark rum
- 1/3 cup Worchestershire sauce
- 1/4 cup Cider vinegar
- 2 tl. Peanut oil
- 2 tbl. Paprika
- 2 tbl. Chilli powder
- 1/2 tsp. Ground coriander
- 1/2 tsp. Ground cumin
- 1/4 tsp. Salt
- 1/4 tsp. Ground black pepper
- 1/4 tsp. Cayenne pepper
- 1 Onion (chopped)
- 1 Garlic clove (crushed)
Method
- Take a saucepan over a steady heat and combine the onions and garlic.
- Sauté the onions and garlic for about 4 minutes.
- Add the dark rum, tomato ketchup, Worchestershire sauce, chilli powder, ground cumin, cider vinegar, coriander, cayenne pepper and seasoning.
- Bring the mixture to the boil while stirring.
- Reduce the heat and simmer for about 5 minutes.
- Place the salmon fillets in a bowl and brush generously with the marinade.
- Cover the bowl and refridgerate overnight.
- Place the marinaded salmon fillets on a preheated grill and cook through.
- Once cooked, serve on a plate and garnish with the sauce.
