Grilled Salmon with Barbecue Sauce Recipe

Ingredients

  • 6 oz. Salmon fillets
  • 1 1/2 cup Tomato ketchup
  • 1/2 cup Dark rum
  • 1/3 cup Worchestershire sauce
  • 1/4 cup Cider vinegar
  • 2 tl. Peanut oil
  • 2 tbl. Paprika
  • 2 tbl. Chilli powder
  • 1/2 tsp. Ground coriander
  • 1/2 tsp. Ground cumin
  • 1/4 tsp. Salt
  • 1/4 tsp. Ground black pepper
  • 1/4 tsp. Cayenne pepper
  • 1 Onion (chopped)
  • 1 Garlic clove (crushed)

Method

  1. Take a saucepan over a steady heat and combine the onions and garlic.
  2. Sauté the onions and garlic for about 4 minutes.
  3. Add the dark rum, tomato ketchup, Worchestershire sauce, chilli powder, ground cumin, cider vinegar, coriander, cayenne pepper and seasoning.
  4. Bring the mixture to the boil while stirring.
  5. Reduce the heat and simmer for about 5 minutes.
  6. Place the salmon fillets in a bowl and brush generously with the marinade.
  7. Cover the bowl and refridgerate overnight.
  8. Place the marinaded salmon fillets on a preheated grill and cook through.
  9. Once cooked, serve on a plate and garnish with the sauce.
