Grilled Salmon Served with Fresh Herbs Recipe
Ingredients
- 2 lb. Salmon fillets
- 1 cup Sun dried tomatoes
- 1/2 cup Parsley
- 1/2 cup Basil leaves
- 3 tbl. Oregano leaves
- 1/2 tsp. Salt
- 1/3 tsp. Ground black pepper
- 3 Garlic cloves (crushed)
- 1 Chilli (seeded / peeled)
- 1 Lime (quartered)
- 1 Lemon (quartered)
Method
- Add the sun dried tomatoes, parsley, basil, oregano, chilli, garlic, salt and pepper to a food processor.
- Blend the ingredients together until smooth.
- Place the salmon fillets on a baking tray.
- Cover the top of the salmon fillets with the blendd mixture.
- Then brush the tops with oil.
- Place on the grill and cook through.
- Flip the fillet and cook for a further few minutes.
- Lift off the spatula, garnish with quartered lemon and lime.
- Serve hot.
