Grilled Salmon Served with Fresh Herbs Recipe

Ingredients

  • 2 lb. Salmon fillets
  • 1 cup Sun dried tomatoes
  • 1/2 cup Parsley
  • 1/2 cup Basil leaves
  • 3 tbl. Oregano leaves
  • 1/2 tsp. Salt
  • 1/3 tsp. Ground black pepper
  • 3 Garlic cloves (crushed)
  • 1 Chilli (seeded / peeled)
  • 1 Lime (quartered)
  • 1 Lemon (quartered)

Method

  1. Add the sun dried tomatoes, parsley, basil, oregano, chilli, garlic, salt and pepper to a food processor.
  2. Blend the ingredients together until smooth.
  3. Place the salmon fillets on a baking tray.
  4. Cover the top of the salmon fillets with the blendd mixture.
  5. Then brush the tops with oil.
  6. Place on the grill and cook through.
  7. Flip the fillet and cook for a further few minutes.
  8. Lift off the spatula, garnish with quartered lemon and lime.
  9. Serve hot.
