Caramelized Salmon with Tangy Cherry Salsa Recipe
Ingredients
- 1 1/2 lb. Salmon fillet
- 1 cup Cherries (drained / halved)
- 3 tbl. Brown sugar
- 2 tbl. Fresh mint (chopped)
- 1 tbl. Orange peel (grated)
- 2 tsp. Balsamic vinegar
- 1/2 tsp. Ground pepper
- 1 Mango (seeded / peeled / chopped)
Method
- Take a large mixing bowl and stir the salmon with the brown sugar, pepper and orange.
- Put the fish into a pan, cover and refridgerate overnight.
- Remove the salmon from the pan and drain off excess juices.
- Cook the salmon on a grill for 25 minutes, or until it flakes easily without turning it.
- Take another bowl and combine the mango, mint, cherries, red pepper and balsamic vinegar.
- Put the salmon on a plate and spoon over the salsa.
- Serve hot.
