Caramelized Salmon with Tangy Cherry Salsa Recipe

Ingredients

  • 1 1/2 lb. Salmon fillet
  • 1 cup Cherries (drained / halved)
  • 3 tbl. Brown sugar
  • 2 tbl. Fresh mint (chopped)
  • 1 tbl. Orange peel (grated)
  • 2 tsp. Balsamic vinegar
  • 1/2 tsp. Ground pepper
  • 1 Mango (seeded / peeled / chopped)

Method

  1. Take a large mixing bowl and stir the salmon with the brown sugar, pepper and orange.
  2. Put the fish into a pan, cover and refridgerate overnight.
  3. Remove the salmon from the pan and drain off excess juices.
  4. Cook the salmon on a grill for 25 minutes, or until it flakes easily without turning it.
  5. Take another bowl and combine the mango, mint, cherries, red pepper and balsamic vinegar.
  6. Put the salmon on a plate and spoon over the salsa.
  7. Serve hot.
