Californian Style Walnut Stuffed Salmon Recipe

Ingredients

  • 1 lb. Salmon (skinned / boned)
  • 4 cups Spinach (chopped)
  • 1 cup brown rice (cooked)
  • 1/2 cup walnuts (chopped)
  • 2 tsp. Olive Oil
  • 1/4 tsp. Cheddar cheese (grated)
  • 1 Garlic clove (chopped)
  • Seasoning

Method

  1. Heat a large non-stick skillet over a steady medium heat.
  2. Add the chopped onions and cook until they are browned.
  3. Now add the garlic, spinach, seasoning while stirring to mix.
  4. Then add in the cooked brown rice and lemon zest and stir to combine.
  5. Spread the mixture over the top of the salmon, then sprinkle generously with walnuts and grated cheese.
  6. Then roll the fish a tight roll and tie with some string.
  7. Put the salmon on a lined and greased baking tray.
  8. Bake in an oven preheated to 375°F for about 20 minutes.
  9. Serve piping hot with fresh vegetables.
