Californian Style Walnut Stuffed Salmon Recipe
Ingredients
- 1 lb. Salmon (skinned / boned)
- 4 cups Spinach (chopped)
- 1 cup brown rice (cooked)
- 1/2 cup walnuts (chopped)
- 2 tsp. Olive Oil
- 1/4 tsp. Cheddar cheese (grated)
- 1 Garlic clove (chopped)
- Seasoning
Method
- Heat a large non-stick skillet over a steady medium heat.
- Add the chopped onions and cook until they are browned.
- Now add the garlic, spinach, seasoning while stirring to mix.
- Then add in the cooked brown rice and lemon zest and stir to combine.
- Spread the mixture over the top of the salmon, then sprinkle generously with walnuts and grated cheese.
- Then roll the fish a tight roll and tie with some string.
- Put the salmon on a lined and greased baking tray.
- Bake in an oven preheated to 375°F for about 20 minutes.
- Serve piping hot with fresh vegetables.
