Broiled Salmon in Tasty Polenta and Corn Relish
Ingredients
- 1 lb. Salmon fillets
- 2 oz. Diced pimientos (drained)
- 1 cup Corn kernels
- 1 cup Polenta
- 3 1/2 cups Chicken broth
- 1/3 cup Red onion (chopped)
- 3 tbl. Lime huice
- 1 tbl. Fresh mint
- Seasoning
Method
- Combine the broth and polenta in a saucepan over a steady heat.
- Keep stirring until it reaches boiling point.
- Reduce heat and simmer for 15 minutes until polenta is smooth.
- Cut the salmon into 4 equal-sized pieces and season to taste.
- Oil a baking tray and lay out the salmon cuts.
- Broil for about 5 minutes, flip over and broil for a further 5 minutes.
- Take a small bowl and combine the pimientos, corn, mint and lime juice.
- Spoon out the polenta onto the center of your plates.
- Then place a piece of salmon on top of each pile.
- garnish with the corn relish and season to taste.
