Broiled Salmon in Tasty Polenta and Corn Relish

Ingredients

  • 1 lb. Salmon fillets
  • 2 oz. Diced pimientos (drained)
  • 1 cup Corn kernels
  • 1 cup Polenta
  • 3 1/2 cups Chicken broth
  • 1/3 cup Red onion (chopped)
  • 3 tbl. Lime huice
  • 1 tbl. Fresh mint
  • Seasoning

Method

  1. Combine the broth and polenta in a saucepan over a steady heat.
  2. Keep stirring until it reaches boiling point.
  3. Reduce heat and simmer for 15 minutes until polenta is smooth.
  4. Cut the salmon into 4 equal-sized pieces and season to taste.
  5. Oil a baking tray and lay out the salmon cuts.
  6. Broil for about 5 minutes, flip over and broil for a further 5 minutes.
  7. Take a small bowl and combine the pimientos, corn, mint and lime juice.
  8. Spoon out the polenta onto the center of your plates.
  9. Then place a piece of salmon on top of each pile.
  10. garnish with the corn relish and season to taste.
