Barbecued Salmon with Pesto Sauce Recipe

Ingredients

  • 2 lb. Salmon
  • 3/4 cup Fresh mint (chopped)
  • 3/4 cup Parmesan cheese (grated)
  • 1/2 cup White wine
  • 1/2 cup Whipping cream
  • 1/2 cup Cilantro
  • 1/2 cup Oive oil
  • 2 tbl. Fresh basil (chopped)
  • 6 tbl. Lemon juice
  • 1 tsp. Chilli sauce
  • 1/2 tsp. Black pepper

Method

  1. Heat a clean grill.
  2. Combine the mint, 1/2 cup of parmesan cheese, green onions, cilantro, chilli sauce, basil and salt.
  3. Gradually pour in about 1/4 cup of olive oil while mixing.
  4. In another bowl combine the rest of the olive oil with lemon juice, 1/4 cup of white wine and black pepper.
  5. Add the salmon to the second mix and let it marinade for 30 minutes.
  6. Place the marinaded salmon on the grill for about 10 minutes.
  7. Take a saucepan over a steady heat and add the rest of the white wine and mint mixture. Bring to the boil.
  8. Pour over the salmon when serving.
  9. Sprinkle some parmesan shavings over also to taste.
