Barbecued Salmon with Pesto Sauce Recipe
Ingredients
- 2 lb. Salmon
- 3/4 cup Fresh mint (chopped)
- 3/4 cup Parmesan cheese (grated)
- 1/2 cup White wine
- 1/2 cup Whipping cream
- 1/2 cup Cilantro
- 1/2 cup Oive oil
- 2 tbl. Fresh basil (chopped)
- 6 tbl. Lemon juice
- 1 tsp. Chilli sauce
- 1/2 tsp. Black pepper
Method
- Heat a clean grill.
- Combine the mint, 1/2 cup of parmesan cheese, green onions, cilantro, chilli sauce, basil and salt.
- Gradually pour in about 1/4 cup of olive oil while mixing.
- In another bowl combine the rest of the olive oil with lemon juice, 1/4 cup of white wine and black pepper.
- Add the salmon to the second mix and let it marinade for 30 minutes.
- Place the marinaded salmon on the grill for about 10 minutes.
- Take a saucepan over a steady heat and add the rest of the white wine and mint mixture. Bring to the boil.
- Pour over the salmon when serving.
- Sprinkle some parmesan shavings over also to taste.
