Alaskan Salmon Fajitas Recipe

Ingredients

  • 15 oz. Black beans (rinsed)
  • 1 1/2 Alaskan salmon fillets (skinned)
  • 1/2 cup Green salsa
  • 2 tbl. All-purpose flour
  • 2 large Peppers (cut / sliced thinly)
  • 1 Lime (juiced)
  • 1 Onion (sliced)

Method

  1. Preheat your oven to 450°F.
  2. Prepare the salmon fillets by slicing into 1/2 inch wide strips.
  3. Pour over the lemon juice.
  4. Roll the salmon fillet strips in the flour and season. Combine peppers, beans and salsa.
  5. Cover 4 sheets evenly with the flour, pepper mixture and seasoning mixture.
  6. Set the salmon fillet strips on top.
  7. Fold up the sides of the sheets to form a small tent.
  8. Place in the oven and cook for 30 minutes.
  9. Serve with more salsa if you like!
