Alaskan Salmon Fajitas Recipe
Ingredients
- 15 oz. Black beans (rinsed)
- 1 1/2 Alaskan salmon fillets (skinned)
- 1/2 cup Green salsa
- 2 tbl. All-purpose flour
- 2 large Peppers (cut / sliced thinly)
- 1 Lime (juiced)
- 1 Onion (sliced)
Method
- Preheat your oven to 450°F.
- Prepare the salmon fillets by slicing into 1/2 inch wide strips.
- Pour over the lemon juice.
- Roll the salmon fillet strips in the flour and season. Combine peppers, beans and salsa.
- Cover 4 sheets evenly with the flour, pepper mixture and seasoning mixture.
- Set the salmon fillet strips on top.
- Fold up the sides of the sheets to form a small tent.
- Place in the oven and cook for 30 minutes.
- Serve with more salsa if you like!
