Spanish Grilled Prawns Recipe
Ingredients
- 1 lb. King prawns (peeled)
- 5 tbl. Extra virgin olive oil
- 1 tbl. Parsley (chopped)
- 1 Beefsteak tomato (peeled / seeded / chopped)
- 1 Lemon (juiced)
- 1/2 Garlic clove (crushed)
- 1/2 Red chilli (chopped)
- Seasoning
- Parsley (chopped)
Method
- Using a small sharp knife, make a fine cut along spine oh each prawn and remove black vein.
- Thread prawns onto small skewers and place in a shallow dish.
- In a small bowl, stir together 2 tbl. oil, the garlic, 1 1/2 tbl. lemon juice and salt and pepper.
- Pour over prawns and leave for 30 minutes.
- Preheat grill.
- Lift prawns from dish and place on grill rack; brush with any liquid remaining in dish and grill for 3-4 minutes until bright pink.
- In another small bowl, stir together remaining oil and lemon juice, the tomato, chilli, parsley and salt and pepper.
- Spoon over hot prawns and serve garnished with parsley sprigs and lemon slices and rind.
