Spanish Grilled Prawns Recipe

Ingredients

  • 1 lb. King prawns (peeled)
  • 5 tbl. Extra virgin olive oil
  • 1 tbl. Parsley (chopped)
  • 1 Beefsteak tomato (peeled / seeded / chopped)
  • 1 Lemon (juiced)
  • 1/2 Garlic clove (crushed)
  • 1/2 Red chilli (chopped)
  • Seasoning
  • Parsley (chopped)

Method

  1. Using a small sharp knife, make a fine cut along spine oh each prawn and remove black vein.
  2. Thread prawns onto small skewers and place in a shallow dish.
  3. In a small bowl, stir together 2 tbl. oil, the garlic, 1 1/2 tbl. lemon juice and salt and pepper.
  4. Pour over prawns and leave for 30 minutes.
  5. Preheat grill.
  6. Lift prawns from dish and place on grill rack; brush with any liquid remaining in dish and grill for 3-4 minutes until bright pink.
  7. In another small bowl, stir together remaining oil and lemon juice, the tomato, chilli, parsley and salt and pepper.
  8. Spoon over hot prawns and serve garnished with parsley sprigs and lemon slices and rind.
