Prawns In Overcoats Recipe

Ingredients

  • 1 lb. King prawns (raw)
  • 16 fl. oz. Light ale
  • 7 oz Plain flour
  • Olive oil
  • Seasoning
  • Lemon wedges

Method

  1. Using a small sharp knife, make a fine cut along spine of each prawn and remove black vein.
  2. Squeeze lemon juice over prawns and season lightly. Set aside for 15 minutes.
  3. In a bowl, stir together flour and a small pinch of salt.
  4. Slowly whisk in ale to make a smooth, thick batter.
  5. Two-thirds fill a deep fat fryer with oil and heat to 350°F.
  6. Pat prawns dry with absorbent kitchen paper.
  7. Pick up each prawn in turn by its tail and drip in batter; do not cover tail.
  8. Lower into oil and cook for about 4 minutes until crisp and golden.
  9. Drain on obsorbant kitchen paper and serve hot, garnished with lemon and lime wedges and dill.
