Lemon and Ginger Prawns Recipe

Ingredients

  • 3 lb. Prawns (peeled / deveined)
  • 1/2 cup Olive oil
  • 1/4 cup Lemon juice
  • 2 tbl. Cilantro leaves (crushed)
  • 2 tbl. Ginger root (grated)
  • 2 tsp. Sesame oil
  • 1 tsp. Paprika
  • 1/2 tsp. Black pepper
  • 1/2 tsp. Salt
  • 2 Garlic cloves (crushed)
  • 1 Onion (chopped)

Method

  1. Add the sesame oil, olive oil, lemon juice, cilantro, ginger, paprika, chopped onion, crushed garlic, salt and pepper to a food processor.
  2. Whisk the ingredients together until smooth and without any lumps.
  3. Pour out all the mixture into a deep baking tray (reserving a little in a cup).
  4. Drop the prawns into the mixture and cover them.
  5. Now cover the whole tray and refridgerate for about 2 hours.
  6. Skewer the prawns.
  7. Heat a barbecue, making sure it's plenty smokey!
  8. Grill the skewered prawns for about 3 minutes, turning frequently.
  9. Use the reserved sauce to brush over while grilling.
  10. Serve hot and garnish with lemon wedges and parsley.
