Lemon and Ginger Prawns Recipe
Ingredients
- 3 lb. Prawns (peeled / deveined)
- 1/2 cup Olive oil
- 1/4 cup Lemon juice
- 2 tbl. Cilantro leaves (crushed)
- 2 tbl. Ginger root (grated)
- 2 tsp. Sesame oil
- 1 tsp. Paprika
- 1/2 tsp. Black pepper
- 1/2 tsp. Salt
- 2 Garlic cloves (crushed)
- 1 Onion (chopped)
Method
- Add the sesame oil, olive oil, lemon juice, cilantro, ginger, paprika, chopped onion, crushed garlic, salt and pepper to a food processor.
- Whisk the ingredients together until smooth and without any lumps.
- Pour out all the mixture into a deep baking tray (reserving a little in a cup).
- Drop the prawns into the mixture and cover them.
- Now cover the whole tray and refridgerate for about 2 hours.
- Skewer the prawns.
- Heat a barbecue, making sure it's plenty smokey!
- Grill the skewered prawns for about 3 minutes, turning frequently.
- Use the reserved sauce to brush over while grilling.
- Serve hot and garnish with lemon wedges and parsley.
