King Prawns with Thai Style Banana Salsa Recipe

Ingredients

  • 1 1/2 lb. Tiger prawns (peeled / deveined)
  • 1/2 cup Min leaves
  • 1/2 cup Cilantro leaves
  • 1/4 cup Lime juice
  • 1 tbl. Brown sugar
  • 1 tbl. Fish sauce
  • 1 tsp. Ginger root (grated)
  • 2 Cucumbers (peeled / seeded / diced)
  • 2 Bananas (peeled / sliced)
  • 1 Red chilli pepper (sliced)

Method

  1. Combine the cucumber, banana, cilantro leaves, mint leaves and red chilli pepper in a large bowl.
  2. In a separate bowl combine the fish sauce, lime juice and brown sugar.
  3. Heat a large saucepan filled with salted water and bring to the boil.
  4. Cook the prawns in the water for 3 minutes.
  5. Serve the prawns on a serving plate.
  6. Garnish with the salsa.
