Vegetarian Pepper and Corn Paella Recipe

Ingredients

  • 2 cups Vegetable stock
  • 1 1/2 cups Corn Kernels
  • 1 cup Rice
  • 1 tbl. Vegetable oil
  • 1/4 tsp. Salt
  • 1/4 tsp. Pepper
  • 1/4 tsp. Tumeric
  • 2 Plum tomatoes (chopped)
  • 2 Garlic cloves (crushed)
  • 1 Red pepper (halved)
  • 1 Green pepper (halved)
  • 1 Onion (chopped)

Method

  1. Heat the oil in a large skillet over a medium heat.
  2. Add the garlic, onion, rice and tumeric and cook for about 5 minutes.
  3. Then add the salt, pepper and stock while stirring.
  4. Bring to the boil, then reduce the heat and simmer for 10 minutes.
  5. Cut the halved peppers into small pieces.
  6. Add the peppers along with the tomatoes to the skillet, cover and cook for a further 15 minutes.
  7. Then add the corn while stirring, and cook for another 5 minutes.
  8. garnish with parsley and serve hot!
