Vegetarian Pepper and Corn Paella Recipe
Ingredients
- 2 cups Vegetable stock
- 1 1/2 cups Corn Kernels
- 1 cup Rice
- 1 tbl. Vegetable oil
- 1/4 tsp. Salt
- 1/4 tsp. Pepper
- 1/4 tsp. Tumeric
- 2 Plum tomatoes (chopped)
- 2 Garlic cloves (crushed)
- 1 Red pepper (halved)
- 1 Green pepper (halved)
- 1 Onion (chopped)
Method
- Heat the oil in a large skillet over a medium heat.
- Add the garlic, onion, rice and tumeric and cook for about 5 minutes.
- Then add the salt, pepper and stock while stirring.
- Bring to the boil, then reduce the heat and simmer for 10 minutes.
- Cut the halved peppers into small pieces.
- Add the peppers along with the tomatoes to the skillet, cover and cook for a further 15 minutes.
- Then add the corn while stirring, and cook for another 5 minutes.
- garnish with parsley and serve hot!
