Simple Paella Casserole Recipe
Ingredients
- 14 oz. Tomatoes (diced)
- 8 oz. 4 Cheese mix
- 8 oz. Spanish rice mix
- 6 oz. Shrimp (cooked)
- 2 cups Chicken (cooked / diced)
- 1 cup Frozen peas
Method
- Cook the rice along with the tomatoes in a large saucepan over a medium heat.
- Stir in the chicken, shrimp and peas.
- Simmer for a minute and lift off heat.
- Spoon half of the rice mixture into a large baking dish.
- Sprinkle with about 1 cup of the cheese.
- Then spoon in the rest of the rice mixture.
- Cover the baking dish with aluminium foil.
- Bake in an oven preheated to 375°F for about 25 minutes.
- Once cooked, lift out and sprinkle the rest of the cheese over the rice.
- Serve with a garnish of parsley and lemon wedges.
