Shrimp Paella Recipe

Ingredients

  • 1 lb. Shrimp
  • 8 oz. Clam juice
  • 2 cups Rice
  • 1/2 cup White wine
  • 1/4 cup Parsley (chopped)
  • 1/4 cup Chorizo (cooked)
  • 1 tbl. Olive oil
  • 1/4 tsp. Ground red pepper
  • 1/8 tsp. Thyme
  • 1/8 tsp. Saffron
  • 1 can Tomatoes (in puree)
  • 2 Garlic cloves (crushed)
  • 1 Bay leaf
  • 1 Red pepper (chopped)
  • 1 Onion (chopped)

Method

  1. Heat a large skillet over a medium heat.
  2. Add the red pepper, onion and cook until tender.
  3. While stirring, add the ground red pepper and garlic.
  4. Add the tomatoes and white wine while stirring.
  5. Then add the clam juice, chorizo, thyme, saffron, salt, rice, bay leaf and about 2 cups of water.
  6. Bring to a boil, then reduce heat, cover and simmer for 15 minutes.
  7. Stir in the peas, add the shrimp, then cover and bake for a further 15 minutes.
  8. Remove from heat, discard the bay leaf and sprinkle generously with lemon wedges and parsley.
  9. Serve immediately!
