Shrimp Paella Recipe
Ingredients
- 1 lb. Shrimp
- 8 oz. Clam juice
- 2 cups Rice
- 1/2 cup White wine
- 1/4 cup Parsley (chopped)
- 1/4 cup Chorizo (cooked)
- 1 tbl. Olive oil
- 1/4 tsp. Ground red pepper
- 1/8 tsp. Thyme
- 1/8 tsp. Saffron
- 1 can Tomatoes (in puree)
- 2 Garlic cloves (crushed)
- 1 Bay leaf
- 1 Red pepper (chopped)
- 1 Onion (chopped)
Method
- Heat a large skillet over a medium heat.
- Add the red pepper, onion and cook until tender.
- While stirring, add the ground red pepper and garlic.
- Add the tomatoes and white wine while stirring.
- Then add the clam juice, chorizo, thyme, saffron, salt, rice, bay leaf and about 2 cups of water.
- Bring to a boil, then reduce heat, cover and simmer for 15 minutes.
- Stir in the peas, add the shrimp, then cover and bake for a further 15 minutes.
- Remove from heat, discard the bay leaf and sprinkle generously with lemon wedges and parsley.
- Serve immediately!
