Portuguese Style Paella Recipe
Ingredients
- 2 lb. Chicken (chopped)
- 1 1/2 lb. Shrimp (shelled / deveined)
- 1 lb. Italian sausage
- 1 lb. Lean pork (chopped)
- 10 oz. Frozen peas
- 7 oz. Chicken broth
- 4 oz. Pimentos
- 2 cups Rice
- 2 cups Onions (chopped)
- 1/2 cup Olive oil
- 2 tsp. Salt
- 1 tsp. Oregano
- 1/2 tsp. Saffron
- 1/4 tsp. Black pepper
- 2 Tomatoes (chopped)
Method
- Heat a skillet with a little oil and cook the chicken until golden brown.
- Once cooked, remove and set aside.
- Then add the pork and fry until brown, before lifting out and setting aside.
- Then add the garlic, onion, oregano and pepper. Cook for 5 minutes.
- Now add the rice, saffron, salt and cook for a further 10 minutes.
- take another skillet and brown the sausages. Once cooked, cut into small pieces.
- Place the chicken, pork and sausage in a roasting pan.
- Add the tomatoes, chicken broth and bay leaf.
- Then add the shrimp, bring to the boil.
- Spoon the mixture over the meat in the roasting pan.
- Bake in an oven preheated to 375°F for an hour.
- Sprinkle the top with the frozen peas and bake for another 20 minutes.
- Serve with a garnish of lemon wedges and pimentos.
