Scottish Pan Fried Oysters Recipe
Ingredients
- 24 Oysters (shucked)
- 4 oz. Butter
- 1 oz. Parmesan cheese (grated)
- 1/8 pt. Vegetable oil
- 4 tbl. Whipping cream
- 3 tbl. Scallions (chopped)
- 1/4 tsp. Garlic clove (chopped)
- 1 dash Worchestershire sauce
- 1 pinch Mace
- 1 pinch Salt
- 1 pinch Paprika
- 1 pinch Ground nutmeg
- 5 Eggs
- 4 Lemons (wedges)
Method
- Season the oysters with salt and pepper.
- Sprinkle generously with Worchestershire sauce and lemon juice.
- Dredge the oysters through flour and cover completely. Remove excess.
- In a mixing bowl combine the eggs, garlic, parmesan cheese, paprika, mace, salt and garlic.
- Now coat the oysters in the mixture.
- Heat a skillet and sauté the oysters in their batter until golden brown.
- Drain excess fat using paper towels.
- Drop in the butter and scallions and fry.
- Add oysters to serving plate and cover with fried scallions.
- Garnish with lemon wedges.
