Scottish Pan Fried Oysters Recipe

Ingredients

  • 24 Oysters (shucked)
  • 4 oz. Butter
  • 1 oz. Parmesan cheese (grated)
  • 1/8 pt. Vegetable oil
  • 4 tbl. Whipping cream
  • 3 tbl. Scallions (chopped)
  • 1/4 tsp. Garlic clove (chopped)
  • 1 dash Worchestershire sauce
  • 1 pinch Mace
  • 1 pinch Salt
  • 1 pinch Paprika
  • 1 pinch Ground nutmeg
  • 5 Eggs
  • 4 Lemons (wedges)

Method

  1. Season the oysters with salt and pepper.
  2. Sprinkle generously with Worchestershire sauce and lemon juice.
  3. Dredge the oysters through flour and cover completely. Remove excess.
  4. In a mixing bowl combine the eggs, garlic, parmesan cheese, paprika, mace, salt and garlic.
  5. Now coat the oysters in the mixture.
  6. Heat a skillet and sauté the oysters in their batter until golden brown.
  7. Drain excess fat using paper towels.
  8. Drop in the butter and scallions and fry.
  9. Add oysters to serving plate and cover with fried scallions.
  10. Garnish with lemon wedges.
