Scalloped Oysters Recipe

Ingredients

  • 2 cups Oysters (reserve liquid)
  • 1 1/2 cup Croutons
  • 1 1/2 cup Bread crumbs
  • 2/3 cup Cream
  • 1/4 cup Celery (chopped)
  • 2 tbl. Parsley (chopped)
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper

Method

  1. Take a large casserole.
  2. Add the bread crumbs, oysters, salt, pepper, celery, parsley and cream.
  3. Stir the ingredients well to mix.
  4. Place in a microwave at a high heat for 12 minutes.
  5. Take out and sprinkle the top with croutons.
  6. Place back into the microwave for a further 2 minutes.
  7. Serve with a garnish of lemons and chopped parsley.
