Peppered Oysters Recipe

Ingredients

  • 24 Oysters (shucked / with juice)
  • 3 tbl. Olive oil
  • 2 tbl. Black peppercorns
  • 2 tbl. Lime juice
  • 1/2 tsp. Salt
  • 3 Garlic cloves (peeled)
  • 3 Bay leaves

Method

  1. Sauté the oysters with the oyster juice and poach for about 2 minutes until their edges curl.
  2. Grind the garlic, salt and black peppercorns into a paste.
  3. Add about 1/2 cup of oyster juice to the mixture and grind further.
  4. Lift the oysters out of the pan and set aside.
  5. Add the bay leaves to the pan and bring the juices to boil.
  6. Add the garlic paste mixture and stir well.
  7. Once heated, add the oysters again and simmer for a couple of minutes.
  8. Sprinkle with lime juice just before serving.
