Peppered Oysters Recipe
Ingredients
- 24 Oysters (shucked / with juice)
- 3 tbl. Olive oil
- 2 tbl. Black peppercorns
- 2 tbl. Lime juice
- 1/2 tsp. Salt
- 3 Garlic cloves (peeled)
- 3 Bay leaves
Method
- Sauté the oysters with the oyster juice and poach for about 2 minutes until their edges curl.
- Grind the garlic, salt and black peppercorns into a paste.
- Add about 1/2 cup of oyster juice to the mixture and grind further.
- Lift the oysters out of the pan and set aside.
- Add the bay leaves to the pan and bring the juices to boil.
- Add the garlic paste mixture and stir well.
- Once heated, add the oysters again and simmer for a couple of minutes.
- Sprinkle with lime juice just before serving.
