Pecan Breaded Oysters Recipe

Ingredients

  • 16 Oysters
  • 8 oz. Flour
  • 5 oz. Pecan halves
  • 4 oz. Unsalted butter
  • 4 oz. Heavy cream
  • 1 tbl. Vegetable oil
  • 1 pinch Salt
  • 1 pinch Pepper
  • 4 Plum tomatoes (seeded / peeled / diced)
  • 2 Vanilla pods (halved)
  • 1 Cucumber (seeded / peeled / diced)

Method

  1. Put the vanilla, cucumber and cream in a saucepan.
  2. While stirring, heat the ingredients and gradually add the oil.
  3. Season with salt and pepper.
  4. Stir in the tomatoes.
  5. Simmer for a few minutes and then set aside.
  6. Add the pecans and flour to a food processor and whisk until smooth.
  7. Roll the oysters in the pecan mix, covering all sides.
  8. Heat a skillet, add a little oil and sauté the oysters.
  9. Place the oyster shells on a serving plate.
  10. Place the oysters on the shells.
  11. Garnish with lemon wedges.
