Pecan Breaded Oysters Recipe
Ingredients
- 16 Oysters
- 8 oz. Flour
- 5 oz. Pecan halves
- 4 oz. Unsalted butter
- 4 oz. Heavy cream
- 1 tbl. Vegetable oil
- 1 pinch Salt
- 1 pinch Pepper
- 4 Plum tomatoes (seeded / peeled / diced)
- 2 Vanilla pods (halved)
- 1 Cucumber (seeded / peeled / diced)
Method
- Put the vanilla, cucumber and cream in a saucepan.
- While stirring, heat the ingredients and gradually add the oil.
- Season with salt and pepper.
- Stir in the tomatoes.
- Simmer for a few minutes and then set aside.
- Add the pecans and flour to a food processor and whisk until smooth.
- Roll the oysters in the pecan mix, covering all sides.
- Heat a skillet, add a little oil and sauté the oysters.
- Place the oyster shells on a serving plate.
- Place the oysters on the shells.
- Garnish with lemon wedges.
