Oysters Tsai Recipe

Ingredients

  • 12 Oysters (shucked)
  • 1 cup Spinach leaves
  • 1/2 cup Basil
  • 1 tbl. Garlic (chopped)
  • 1 tbl. Lime juice
  • 1 tbl. Fish sauce
  • 1 tbl. Butter
  • 1 Jalapeno pepper
  • Salt
  • Pepper
  • Bread crumbs

Method

  1. Take a skillet over a steady heat and add a little olive oil.
  2. Add the jalapeno chilli and garlic and sauté.
  3. Add the lime juice,basil, spinach and fish sauce.
  4. Stir and cook until tender.
  5. Add salt and pepper to season.
  6. Lift off the heat and drain off any excess water.
  7. Then put into a food processor and puree with butter.
  8. Place the shucked oysters on a baking tray.
  9. Top each oyster with a generous amount of the sauce mixture.
  10. Bake in an oven preheated to 450°F for about 5 minutes.
  11. Garnish with parsley and lemon before serving up!
