Oysters Tsai Recipe
Ingredients
- 12 Oysters (shucked)
- 1 cup Spinach leaves
- 1/2 cup Basil
- 1 tbl. Garlic (chopped)
- 1 tbl. Lime juice
- 1 tbl. Fish sauce
- 1 tbl. Butter
- 1 Jalapeno pepper
- Salt
- Pepper
- Bread crumbs
Method
- Take a skillet over a steady heat and add a little olive oil.
- Add the jalapeno chilli and garlic and sauté.
- Add the lime juice,basil, spinach and fish sauce.
- Stir and cook until tender.
- Add salt and pepper to season.
- Lift off the heat and drain off any excess water.
- Then put into a food processor and puree with butter.
- Place the shucked oysters on a baking tray.
- Top each oyster with a generous amount of the sauce mixture.
- Bake in an oven preheated to 450°F for about 5 minutes.
- Garnish with parsley and lemon before serving up!
