Oysters served with Caviar Recipe

Ingredients

  • 24 Oysters (with shells)
  • 3/4 cup Heavy cream
  • 1/4 cup Dry sherry
  • 3 tbl. Black caviar
  • 2 tbl. Flour
  • 2 tbl. Butter
  • 1/8 tsp. White pepper
  • Scallions (chopped)
  • Parsley (chopped)
  • Lemon wedges

Method

  1. Take a heavy saucepan and melt the butter until bubbling.
  2. Add the flour, stir and cook for about 5 minutes.
  3. While stirring, add the cream, sherry, pepper and cheese.
  4. Then add the caviar, simmer for a minute and lift off the heat.
  5. Place the oysters on a baking tray and cover with the sauce.
  6. Sprinkle them generously with parmesan cheese.
  7. Bake in an oven preheated to 400°F for about 6 minutes until they are golden brown.
  8. Serve on plates garnished with lemon wedges, scallions and parsley.
