Oysters Bienville Recipe
Ingredients
- 36 Oysters
- 1 1/2 cup Shrimp (chopped)
- 1 1/2 cup Chicken stock
- 1 cup Mushrooms (minced)
- 2/3 cup White wine
- 3 tbl. Flour
- 2 tbl. Heavy cream
- 2 Onions (chopped)
- 2 Egg yolks
- Parmesan cheese (grated)
- Bread crumbs
- Salt
Method
- Melt the butter in a skillet over a steady heat and sauté the onions until brown.
- Stir in the flour and cook until brown.
- Then stir in the chicken stock, shrimp, wine and mushrooms.
- Cook for about 10 minutes.
- Open the oysters and put them on individual baking sheets on rock salt.
- Bake in an oven preheated to 350°F for about 5 minutes.
- In a separate bowl beat the egg yolks with the heaavy cream and add to the mixture.
- Cover each oyster with the sauce.
- Sprinkle generously with bread crumbs and parmesan cheese on top.
- Return to the oven and cook for a further 10 minutes until brown.
- Serve hot with lemon wedges to garnish.
