Oysters Bienville Recipe

Ingredients

  • 36 Oysters
  • 1 1/2 cup Shrimp (chopped)
  • 1 1/2 cup Chicken stock
  • 1 cup Mushrooms (minced)
  • 2/3 cup White wine
  • 3 tbl. Flour
  • 2 tbl. Heavy cream
  • 2 Onions (chopped)
  • 2 Egg yolks
  • Parmesan cheese (grated)
  • Bread crumbs
  • Salt

Method

  1. Melt the butter in a skillet over a steady heat and sauté the onions until brown.
  2. Stir in the flour and cook until brown.
  3. Then stir in the chicken stock, shrimp, wine and mushrooms.
  4. Cook for about 10 minutes.
  5. Open the oysters and put them on individual baking sheets on rock salt.
  6. Bake in an oven preheated to 350°F for about 5 minutes.
  7. In a separate bowl beat the egg yolks with the heaavy cream and add to the mixture.
  8. Cover each oyster with the sauce.
  9. Sprinkle generously with bread crumbs and parmesan cheese on top.
  10. Return to the oven and cook for a further 10 minutes until brown.
  11. Serve hot with lemon wedges to garnish.
