Eggplant and Oysters Recipe

Ingredients

  • 1 pt. Oysters
  • 1/2 cup Bread crumbs
  • 1/4 Onion (chopped)
  • 1 Eggplant (halved)
  • 1 Garlic clove (crushed)
  • 1/2 stick Butter
  • Thyme
  • Salt
  • Pepper

Method

  1. Scoop the flesh out of the eggplant leaving a 1/2inch thick shell inside the skin.
  2. Chop up the eggplant, then cut the oysters into small pieces.
  3. Heat a skillet and melt the butter.
  4. Add the garlic and onion and sauté until transparent.
  5. Add the oysters and eggplant flesh, then cook for about 1 minute.
  6. While stirring, add the bread crumbs, salt, pepper and thyme.
  7. Scoop the mixture into the eggplant shells.
  8. Place the stuffed eggplant shells on a baking sheet.
  9. Bake in anoven preheated to 350°F for about 30 minutes.
  10. Serve hot and garnish with lemon wedges.
