Eggplant and Oysters Recipe
Ingredients
- 1 pt. Oysters
- 1/2 cup Bread crumbs
- 1/4 Onion (chopped)
- 1 Eggplant (halved)
- 1 Garlic clove (crushed)
- 1/2 stick Butter
- Thyme
- Salt
- Pepper
Method
- Scoop the flesh out of the eggplant leaving a 1/2inch thick shell inside the skin.
- Chop up the eggplant, then cut the oysters into small pieces.
- Heat a skillet and melt the butter.
- Add the garlic and onion and sauté until transparent.
- Add the oysters and eggplant flesh, then cook for about 1 minute.
- While stirring, add the bread crumbs, salt, pepper and thyme.
- Scoop the mixture into the eggplant shells.
- Place the stuffed eggplant shells on a baking sheet.
- Bake in anoven preheated to 350°F for about 30 minutes.
- Serve hot and garnish with lemon wedges.
