Deep Fried Bacon Wrapped Oysters Recipe

Ingredients

  • 12 Oysters (shelled)
  • 1 cup Mixed nutmeats
  • 1/2 cup Flour
  • 3 tbl. Smoked ham
  • 2 tbl. Soy sauce
  • 2 tbl. Sherry
  • 3 slices Bacon
  • 1 slice Ginger
  • 1 pinch Salt
  • 1 pinch Pepper
  • 2 Scallion stalks
  • Oil
  • Lemon wedges

Method

  1. Mince the ginger root and combine with the soy sauce and sheery.
  2. Add the oysters in a bowl and set aside for 15 minutes.
  3. Drain the oysters and discard the juices.
  4. Crush the nutmeats into a powder.
  5. Cut each bacon strip into 4 pieces.
  6. Dip each oyster in the crushed nutmeats and top with smoked ham and scallions.
  7. Then wrap each oyster with a slice of bacon.
  8. Beat the eggs lightly, then add the flour, salt and pepper while stirring.
  9. Dip the bacon wrapped oysters in the flour mixture.
  10. Heat a deep frier and deep fry the oysters until browned.
  11. Remove and dry off on kitchen paper.
  12. Place on a serving plate, garnish with lemon wedges and serve.
