Creamed Oysters with Rice Recipe

Ingredients

  • 2 cups Cooked rice
  • 1 1/2 cup Milk
  • 1 cup Oysters in liquor
  • 3 tsp. Butter
  • 2 tsp. Flour
  • 2 tsp. Parsley (chopped)
  • 1 dash Paprika
  • 1 dash Ground black pepper
  • 1 dash Tabasco sauce
  • 6 Cooked eggs (halved)

Method

  1. Cook the oysters in liquor in a skillet over a steady heat for 5 minutes.
  2. Add the butter and flour. Cook until browned.
  3. Drain the liquor from the oysters and add about 1 - 1 1/2 cups of milk.
  4. Lift out the oysters and set aside.
  5. Add the salt, pepper, tabasco sauce, celery and parsley.
  6. Stir well to mix the ingredients thoroughly.
  7. Add the oysters back in and cook through.
  8. Cook the rice.
  9. Arrange rice on a plate.
  10. Place the sliced eggs over the rice.
  11. Pour the creamy oysters over the top.
  12. Sprinkle with paprika and parsley.
