Chesapeake Oysters with Mushrooms Recipe

Ingredients

  • 2 oz. Shiitake mushrooms (sliced)
  • 2 pt. Heavy cream
  • 4 cups Chesapeake oysters
  • 4 tsp. White wine
  • 2 tsp. Shallots (chopped)
  • 4 Brioche (warmed / hollowed)
  • Salt
  • Pepper

Method

  1. Place a saucepan over a steady heat, pour in the cream and heat cream until simmering.
  2. Reduce the cream by half of original amount.
  3. Take a separate saucepan over a steady heat.
  4. Add the shiitake mushrooms, shallots and white wine. Cook for 10 minutes.
  5. Add the oysters and cook until the oysters curl round the edges.
  6. Pour the mixture into each half of the brioche and serve hot.
