Chesapeake Oysters with Mushrooms Recipe
Ingredients
- 2 oz. Shiitake mushrooms (sliced)
- 2 pt. Heavy cream
- 4 cups Chesapeake oysters
- 4 tsp. White wine
- 2 tsp. Shallots (chopped)
- 4 Brioche (warmed / hollowed)
- Salt
- Pepper
Method
- Place a saucepan over a steady heat, pour in the cream and heat cream until simmering.
- Reduce the cream by half of original amount.
- Take a separate saucepan over a steady heat.
- Add the shiitake mushrooms, shallots and white wine. Cook for 10 minutes.
- Add the oysters and cook until the oysters curl round the edges.
- Pour the mixture into each half of the brioche and serve hot.
