Baked Oysters Lafitte Recipe
Ingredients
- 16 Oysters
- 8 oz. Crab meat
- 2 cups Heavy cream
- 1/4 cup White wine
- 8 oz. Crab meat
- 2 tbl. Butter
- 1 tbl. Parmesan cheese (grated)
- 1/2 tsp. White pepper
- 2 Shallots (chopped)
- 2 sprigs Dill
- 1 Garlic clove (crushed)
- Seasoning
Method
- Clean the oysters and leave the meat on half the shell.
- Shuck the oysters over a bowl to reserve as much of the juice as possible and set aside.
- Melt the butter in a hot skillet.
- Add the shallots and garlic, then sauté until tender.
- Add the white wine and cook until reduced to thick sauce.
- Now add the cream and the oyster juice.
- Reduce until thickened.
- Add the dill, parmesan cheese and seasoning while stirring.
- Remove from heat and arrange the oysters on the half shell on a baking sheet.
- Top off the oysters with crab meat.
- Then top each oyster with a few spoonfuls of the sauce and sprinkle with cheese.
- Bake in an oven preheated to 375° F until browned.
- Garnish with chopped parsley and serve hot.
