Baked Oysters Lafitte Recipe

Ingredients

  • 16 Oysters
  • 8 oz. Crab meat
  • 2 cups Heavy cream
  • 1/4 cup White wine
  • 8 oz. Crab meat
  • 2 tbl. Butter
  • 1 tbl. Parmesan cheese (grated)
  • 1/2 tsp. White pepper
  • 2 Shallots (chopped)
  • 2 sprigs Dill
  • 1 Garlic clove (crushed)
  • Seasoning

Method

  1. Clean the oysters and leave the meat on half the shell.
  2. Shuck the oysters over a bowl to reserve as much of the juice as possible and set aside.
  3. Melt the butter in a hot skillet.
  4. Add the shallots and garlic, then sauté until tender.
  5. Add the white wine and cook until reduced to thick sauce.
  6. Now add the cream and the oyster juice.
  7. Reduce until thickened.
  8. Add the dill, parmesan cheese and seasoning while stirring.
  9. Remove from heat and arrange the oysters on the half shell on a baking sheet.
  10. Top off the oysters with crab meat.
  11. Then top each oyster with a few spoonfuls of the sauce and sprinkle with cheese.
  12. Bake in an oven preheated to 375° F until browned.
  13. Garnish with chopped parsley and serve hot.
