Thai Style Steamed Mussels Recipe

Ingredients

  • 5 lb. Mussels (cleaned)
  • 13 oz. Coconut milk
  • 2 cups Cilantro
  • 1/3 cup White wine
  • 1/3 cup Lime juice
  • 1 1/2 tbl. Thai red curry paste
  • 1 1/2 tbl. Garlic cloves (crushed)
  • 1 tbl. White sugar
  • 1 tbl. Fish sauce

Method

  1. Add the coconut milk, lime juice, crushed garlic, fish sauce, curry paste, white wine and sugar to a large cooking pot.
  2. Cover the pot and bring it to a boil for 2 minutes.
  3. Then add the mussels, reduce heat and steam the mussels until they all open.
  4. If you find some mussels will not open, remove them.
  5. Pour the mussels and sauce into a serving bowl.
  6. Toss in some cilantro and serve immediately.
