Simple Curried Mussels Recipe

Ingredients

  • 1 1/2 lb. Mussels (cleaned)
  • 1 cup Heavy cream
  • 1 cup White wine
  • 1 tbl. Butter (unsalted)
  • 1 tbl. Scallions (sliced)
  • 1 tbl. Shallots (sliced)
  • 2 tsp. Curry powder
  • 1 Lemongrass stalk (sliced)
  • 2 Garlic cloves (crushed)

Method

  1. Boil the white wine, shallots, lemongrass, crushed garlic and heavy cream in a saucepan over a medium heat.
  2. Then drop in the mussels, cover with a lid and cook for about 5 minutes.
  3. If any of the mussels do not open, remove them.
  4. Arrange the mussels on serving bowls.
  5. While stirring add the butter, salt, pepper and scallions to the sauce mixture.
  6. Heat through and spoon over the top of the mussels.
  7. Garnish with chopped parsley and lemon.
