Simple Curried Mussels Recipe
Ingredients
- 1 1/2 lb. Mussels (cleaned)
- 1 cup Heavy cream
- 1 cup White wine
- 1 tbl. Butter (unsalted)
- 1 tbl. Scallions (sliced)
- 1 tbl. Shallots (sliced)
- 2 tsp. Curry powder
- 1 Lemongrass stalk (sliced)
- 2 Garlic cloves (crushed)
Method
- Boil the white wine, shallots, lemongrass, crushed garlic and heavy cream in a saucepan over a medium heat.
- Then drop in the mussels, cover with a lid and cook for about 5 minutes.
- If any of the mussels do not open, remove them.
- Arrange the mussels on serving bowls.
- While stirring add the butter, salt, pepper and scallions to the sauce mixture.
- Heat through and spoon over the top of the mussels.
- Garnish with chopped parsley and lemon.
