Reen Mussel Salad Recipe

Ingredients

  • 8 tbl. Virgin olive oil
  • 2 tbl. White wine vinegar
  • 2 tbl. Spanish onion (chopped)
  • 2 tbl. Parsley (chopped)
  • 2 tsp. Capers
  • 1 tsp. Paprika
  • 1/2 Garlic clove (chopped)
  • 1 pinch Cayenne pepper
  • Seasoning
  • Mussels (cleaned)

Method

  1. Place the mussels in a large saucepan with 5 tbl. of water.
  2. Cover the pan and boil for 4-5 minutes, shaking occasionally until mussels open.
  3. Drain mussels and discard any that remain closed.
  4. Remove mussels from shells and discard shells.
  5. In a mixing bowl combine the olive oil, white wine vinegar, onion, parsley, capers, paprika, garlic, cayenne pepper and seasoning.
  6. Add the mussels to the sauce.
  7. Cover and place in refrigerator overnight.
  8. Return to room temperature before serving.
