Reen Mussel Salad Recipe
Ingredients
- 8 tbl. Virgin olive oil
- 2 tbl. White wine vinegar
- 2 tbl. Spanish onion (chopped)
- 2 tbl. Parsley (chopped)
- 2 tsp. Capers
- 1 tsp. Paprika
- 1/2 Garlic clove (chopped)
- 1 pinch Cayenne pepper
- Seasoning
- Mussels (cleaned)
Method
- Place the mussels in a large saucepan with 5 tbl. of water.
- Cover the pan and boil for 4-5 minutes, shaking occasionally until mussels open.
- Drain mussels and discard any that remain closed.
- Remove mussels from shells and discard shells.
- In a mixing bowl combine the olive oil, white wine vinegar, onion, parsley, capers, paprika, garlic, cayenne pepper and seasoning.
- Add the mussels to the sauce.
- Cover and place in refrigerator overnight.
- Return to room temperature before serving.
