Provencale Style Mussels Recipe

Ingredients

  • 36 Mussels (cleaned)
  • 16 oz. Tomatoes (diced)
  • 12 oz. Fettuccini pasta
  • 1/2 cup Olives (pitted)
  • 1 tbl. Olive oil
  • 1 tsp. tarragon (dried)
  • 1 tsp. Basil
  • 1 tsp. Tomato paste
  • 1/2 tsp. Oregano (dried)
  • 5 Mushrooms (chopped)
  • 2 Garlic cloves (crushed)
  • 1 Onion (chopped)

Method

  1. Boil a large pot of water and cook the pasta for around 10 minutes.
  2. Heat a large saucepan over a steady medium heat with a little oil.
  3. Sauté the garlic and chopped onion until golden brown.
  4. Then add the tomato paste, diced tomatoes, chopped mushrooms and mussels while stirring.
  5. Stir in the oregano, basil and tarragon.
  6. Cover the saucepan, reduce the heat and simmer for about 10 minutes.
  7. Stir in the pitted olives and simmer for a further5 minutes.
  8. Arrange the pasta on a serving and top with the mussels and sauce.
  9. Garnish with lemon wedges and parsley.
