Provencale Style Mussels Recipe
Ingredients
- 36 Mussels (cleaned)
- 16 oz. Tomatoes (diced)
- 12 oz. Fettuccini pasta
- 1/2 cup Olives (pitted)
- 1 tbl. Olive oil
- 1 tsp. tarragon (dried)
- 1 tsp. Basil
- 1 tsp. Tomato paste
- 1/2 tsp. Oregano (dried)
- 5 Mushrooms (chopped)
- 2 Garlic cloves (crushed)
- 1 Onion (chopped)
Method
- Boil a large pot of water and cook the pasta for around 10 minutes.
- Heat a large saucepan over a steady medium heat with a little oil.
- Sauté the garlic and chopped onion until golden brown.
- Then add the tomato paste, diced tomatoes, chopped mushrooms and mussels while stirring.
- Stir in the oregano, basil and tarragon.
- Cover the saucepan, reduce the heat and simmer for about 10 minutes.
- Stir in the pitted olives and simmer for a further5 minutes.
- Arrange the pasta on a serving and top with the mussels and sauce.
- Garnish with lemon wedges and parsley.
