Mussels in Thick Lemon Cream Sauce Recipe
Ingredients
- 2 lb. Mussels (cleaned)
- 3/4 cup Heavy cream
- 1/2 cup White wine
- 3 tbl. Garlic cloves (crushed)
- 2 1/2 tbl. Parsley (chopped)
- 2 tbl. Butter (unsalted / melted)
- 1 tbl. Shallots (chopped)
- 2 tsp. Lemon juice
- 2 Tomatoes (chopped)
- 1 Lemon
Method
- Combine the butter, shallots, garlic, parsley, lemon juice, salt and pepper.
- Heat a large saucepan and heat the butter mixture.
- Add the lemon wedges ad cook for about 1 minute.
- Drop in the mussels and cook for another minute.
- Now pour in the wine and cream.
- Cover the saucepan, reduce the heat and simmer until the mussels open.
- If some mussels don't open, remove them.
- Pour into serving bowls and garnish with lemon and pasley.
