Mussels in Thick Lemon Cream Sauce Recipe

Ingredients

  • 2 lb. Mussels (cleaned)
  • 3/4 cup Heavy cream
  • 1/2 cup White wine
  • 3 tbl. Garlic cloves (crushed)
  • 2 1/2 tbl. Parsley (chopped)
  • 2 tbl. Butter (unsalted / melted)
  • 1 tbl. Shallots (chopped)
  • 2 tsp. Lemon juice
  • 2 Tomatoes (chopped)
  • 1 Lemon

Method

  1. Combine the butter, shallots, garlic, parsley, lemon juice, salt and pepper.
  2. Heat a large saucepan and heat the butter mixture.
  3. Add the lemon wedges ad cook for about 1 minute.
  4. Drop in the mussels and cook for another minute.
  5. Now pour in the wine and cream.
  6. Cover the saucepan, reduce the heat and simmer until the mussels open.
  7. If some mussels don't open, remove them.
  8. Pour into serving bowls and garnish with lemon and pasley.
