Lobster Alfredo Recipe

Ingredients

  • 3/4 lb. Fettuccine pasta
  • 2 cups Heavy cream
  • 1 1/4 cups Parmesan cheese (grated)
  • 1 cup Lobster meat (shucked)
  • 1/2 cup Lobster fumet
  • 1/4 cup Parsley (chopped)
  • 1 tbl. Butter
  • 1 tsp. Dijon mustard
  • 1/4 tsp. Tabasco
  • 4 Egg yolks
  • 1 dash Worchestershire sauce

Method

  1. Melt the butter, heavy cream and lobster fumet in a saucepan over a medium heat.
  2. Then add the parmesan cheese while stirring.
  3. Once the cheese has melted add the Worchestershire sauce, Dijon mustard, tabasco and black pepper while stirring.
  4. Reduce heat and simmer for about 20 minutes.
  5. While the sauce simmers, cook the fettuccine pasta.
  6. Cut the lobster into bitesize chunks and drop into the sauce mixture.
  7. Then add the egg yolks and stir.
  8. Put the pasta into serving bowls and pour over the lobster mixture.
  9. Garnish with chopped parsley before serving.
