Dijon Baked Catfish Recipe
Ingredients
- 2 lb. Catfish fillets
- 1 cup Mayonnaise
- 3/4 cup Onion (sliced)
- 1/4 cup Parsley (chopped)
- 1/4 cup Dijon mustard
- 2 tbl. Lemon juice
- 2 tbl. Butter
- 1/2 tsp. Tabasco
- Salt
- Pepper
Method
- Place the catfish fillets in a large oiled baking tray.
- Season the fish with salt and pepper.
- Cover the fillets with sliced onions and brush with butter.
- Bake in an oven preheated to 350°F for 20 minutes.
- Take a small mixing bowl and combine the mustard, lemon juice, mayonnaise and tabasco.
- Pour the sauce over the catfish.
- Place under a broiler and broil for about 3 minutes until golden brown.
- Serve with a garnish of lemon wedges and parsley.
