Dijon Baked Catfish Recipe

Ingredients

  • 2 lb. Catfish fillets
  • 1 cup Mayonnaise
  • 3/4 cup Onion (sliced)
  • 1/4 cup Parsley (chopped)
  • 1/4 cup Dijon mustard
  • 2 tbl. Lemon juice
  • 2 tbl. Butter
  • 1/2 tsp. Tabasco
  • Salt
  • Pepper

Method

  1. Place the catfish fillets in a large oiled baking tray.
  2. Season the fish with salt and pepper.
  3. Cover the fillets with sliced onions and brush with butter.
  4. Bake in an oven preheated to 350°F for 20 minutes.
  5. Take a small mixing bowl and combine the mustard, lemon juice, mayonnaise and tabasco.
  6. Pour the sauce over the catfish.
  7. Place under a broiler and broil for about 3 minutes until golden brown.
  8. Serve with a garnish of lemon wedges and parsley.
