Creole Style Baked Catfish Recipe

Ingredients

  • 20 oz. Catfish fillets
  • 4 cups Cooked rice
  • 1 cup Shrimp (peeled / deveined)
  • 1 cup Green onions (chopped)
  • 1 cup Onions (chopped)
  • 1 cup Celery (chopped)
  • 1 cup Fish stock
  • 3/4 cup Butter (melted)
  • 1/2 cup Parsley (chopped)
  • 1/2 cup Bell pepper (chopped)
  • 1/4 cup Garlic (crushed)
  • 1/2 tsp. Sugar
  • 1 pinch Basil
  • 1 pinch Thyme
  • 2 cans Tomatoe sauce

Method

  1. Take a heavy saucepan over a steady heat and melt the butter.
  2. Sauté the onions, bell pepper, garlic, celery andbay leaves.
  3. Then add the tomatoe sauce and fish stock before bringing to the boil.
  4. Reduce heat and simmer for about 30 minutes.
  5. Remove from heat and set aside.
  6. Place the catfish fillets in a large casserole dish and sprinkle with shrimp.
  7. Then pour the sauce over the fish until covered.
  8. Bake in an oven preheated to 375°F for about 30 minutes.
  9. While baking, cook the rice.
  10. Serve catfish and sauce on a bed of rice.
  11. Garnish with lemon wedges.
