Creole Style Baked Catfish Recipe
Ingredients
- 20 oz. Catfish fillets
- 4 cups Cooked rice
- 1 cup Shrimp (peeled / deveined)
- 1 cup Green onions (chopped)
- 1 cup Onions (chopped)
- 1 cup Celery (chopped)
- 1 cup Fish stock
- 3/4 cup Butter (melted)
- 1/2 cup Parsley (chopped)
- 1/2 cup Bell pepper (chopped)
- 1/4 cup Garlic (crushed)
- 1/2 tsp. Sugar
- 1 pinch Basil
- 1 pinch Thyme
- 2 cans Tomatoe sauce
Method
- Take a heavy saucepan over a steady heat and melt the butter.
- Sauté the onions, bell pepper, garlic, celery andbay leaves.
- Then add the tomatoe sauce and fish stock before bringing to the boil.
- Reduce heat and simmer for about 30 minutes.
- Remove from heat and set aside.
- Place the catfish fillets in a large casserole dish and sprinkle with shrimp.
- Then pour the sauce over the fish until covered.
- Bake in an oven preheated to 375°F for about 30 minutes.
- While baking, cook the rice.
- Serve catfish and sauce on a bed of rice.
- Garnish with lemon wedges.
