Catfish Curry with Cilantro and Tomatoes Recipe
Ingredients
- 3 lb. Catfish fillets
- 1 cup Tomato (chopped)
- 1/4 cup Vegetable oil
- 1/2 tsp. Salt
- 1/2 tsp. Tumeric
- 1/2 tsp. Paprika
- 2 Cilantro sprigs
- 3 Garlic cloves (crushed)
- 1 Onion (chopped)
Method
- Cut the catfish fillets into small 1 inch cubes.
- Heat a large skillet with some oil.
- Sauté the garlic, tomato, onion and paprika for about 5 minutes.
- Add water to the skillet, cover, reduce heat and simmer for 25 minutes.
- Drop the catfish cubes in the skillet and cover with the juices.
- Cover the skillet again and simmer for a further 10 minutes.
- Sprinkle with cilantro and set aside for about 10 minutes.
- Serve with cooked rice and bread.
