Catfish Curry with Cilantro and Tomatoes Recipe

Ingredients

  • 3 lb. Catfish fillets
  • 1 cup Tomato (chopped)
  • 1/4 cup Vegetable oil
  • 1/2 tsp. Salt
  • 1/2 tsp. Tumeric
  • 1/2 tsp. Paprika
  • 2 Cilantro sprigs
  • 3 Garlic cloves (crushed)
  • 1 Onion (chopped)

Method

  1. Cut the catfish fillets into small 1 inch cubes.
  2. Heat a large skillet with some oil.
  3. Sauté the garlic, tomato, onion and paprika for about 5 minutes.
  4. Add water to the skillet, cover, reduce heat and simmer for 25 minutes.
  5. Drop the catfish cubes in the skillet and cover with the juices.
  6. Cover the skillet again and simmer for a further 10 minutes.
  7. Sprinkle with cilantro and set aside for about 10 minutes.
  8. Serve with cooked rice and bread.
