Cantonese Catfish Recipe

Ingredients

  • 1 lb. Catfish fillets
  • 8 oz. Spaghetti
  • 1 cup Carrots (sliced)
  • 1 cup Peas
  • 1/2 cup Scallions (chopped)
  • 3 tbl. Unbleached flour
  • 1 tbl. Sesame oil
  • 1 bl. Sesame seeds (toasted)
  • 1 tbl. Soy sauce
  • 1 Garlic clove (crushed)

Method

  1. Add the spaghetti to a large to a large pot along with water and cook.
  2. While the spaghetti cooks through, take a mixing bowl and combine the mustard and flour.
  3. Then dredge the catfish fillets through the flour mixture.
  4. Shake off any excess flour.
  5. Heat a large skillet over a steady heat and add a little oil.
  6. Then drop the catfish onto the skillet and cook until golden brown.
  7. Once brown, lift onto a heated serving plate.
  8. Then add the scallions, carrots, garlic and peas to the skillet.
  9. Sauté the vegetables for about 2 minutes before adding the soy sauce.
  10. Add the cooked pasta to the skillet, stir well, cover and simmer for about 2 minutes.
  11. Transfer to plates, placing the catfish on top.
  12. Garnish with sesame seeds and some lemon wedges.
