Cantonese Catfish Recipe
Ingredients
- 1 lb. Catfish fillets
- 8 oz. Spaghetti
- 1 cup Carrots (sliced)
- 1 cup Peas
- 1/2 cup Scallions (chopped)
- 3 tbl. Unbleached flour
- 1 tbl. Sesame oil
- 1 bl. Sesame seeds (toasted)
- 1 tbl. Soy sauce
- 1 Garlic clove (crushed)
Method
- Add the spaghetti to a large to a large pot along with water and cook.
- While the spaghetti cooks through, take a mixing bowl and combine the mustard and flour.
- Then dredge the catfish fillets through the flour mixture.
- Shake off any excess flour.
- Heat a large skillet over a steady heat and add a little oil.
- Then drop the catfish onto the skillet and cook until golden brown.
- Once brown, lift onto a heated serving plate.
- Then add the scallions, carrots, garlic and peas to the skillet.
- Sauté the vegetables for about 2 minutes before adding the soy sauce.
- Add the cooked pasta to the skillet, stir well, cover and simmer for about 2 minutes.
- Transfer to plates, placing the catfish on top.
- Garnish with sesame seeds and some lemon wedges.
