Baked Creole Catfish Fillet Recipe
Ingredients
- 2 lb. Catfish fillets
- 12 oz. Creole sauce
- 1 cup Water
- 1 cup Onions (chopped)
- 3/4 cup Celery (chopped)
- 1/2 cup Bell pepper (chopped)
- 2 tbl. Butter
- 1 tsp. Cayenne Powder
- 1/2 tsp. Sugar
- 1/4 tsp. Thyme
- 1/4 tsp. Basil
- 1/4 tsp. Dill
- 2 cans Tomato sauce
- 4 Garlic cloves (crushed)
- 2 Bay leaves
Method
- Arrange the catfish fillets in a lightly oiled baking tray.
- Pour the creole sauce over the catfish.
- Bake in an oven preheated to 350°F for about 20 minutes.
- While the catfish cooks, melt the butter in a heavy saucepan over a steady heat.
- Then add the water and tomato sauce before bringing to the boil.
- Reduce to a simmer for a hour, stirring regularly.
- Season with salt, pepper and cayenne powder.
- Serve catfish and pour over with sauce.
- Garnish with lemon wedges and a sprinkling of parsley.
