Baked Creole Catfish Fillet Recipe

Ingredients

  • 2 lb. Catfish fillets
  • 12 oz. Creole sauce
  • 1 cup Water
  • 1 cup Onions (chopped)
  • 3/4 cup Celery (chopped)
  • 1/2 cup Bell pepper (chopped)
  • 2 tbl. Butter
  • 1 tsp. Cayenne Powder
  • 1/2 tsp. Sugar
  • 1/4 tsp. Thyme
  • 1/4 tsp. Basil
  • 1/4 tsp. Dill
  • 2 cans Tomato sauce
  • 4 Garlic cloves (crushed)
  • 2 Bay leaves

Method

  1. Arrange the catfish fillets in a lightly oiled baking tray.
  2. Pour the creole sauce over the catfish.
  3. Bake in an oven preheated to 350°F for about 20 minutes.
  4. While the catfish cooks, melt the butter in a heavy saucepan over a steady heat.
  5. Then add the water and tomato sauce before bringing to the boil.
  6. Reduce to a simmer for a hour, stirring regularly.
  7. Season with salt, pepper and cayenne powder.
  8. Serve catfish and pour over with sauce.
  9. Garnish with lemon wedges and a sprinkling of parsley.
